Organoleptic analysis: Pale yellow color, fine and creamy foam. Nose to the origins classics for traditional champagnes: Pinot Noir, Meunier and Chardonnay, both mineral, spicy, notes of white flowers and discreet red fruits. Attack in the mouth almost supple, with a long, sustained, structured evolution and finish.
Food / wine pairing: monkfish blanquette with pepper, gingerbread surprise.
